Taco Stuffed Peppers

Here's a recipe for Taco Stuffed Peppers:


Ingredients:


4 large bell peppers (any color)

1 lb ground beef (or ground turkey)

1/2 cup diced onion

2 cloves garlic, minced

1 packet taco seasoning mix

1 cup cooked rice

1 cup canned black beans, drained and rinsed

1 cup canned corn kernels, drained

1 cup shredded cheddar cheese

Salt and pepper, to taste

Optional toppings: diced tomatoes, sliced jalapenos, sour cream, cilantro

Instructions:


Preheat your oven to 375°F (190°C).


Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.


In a large skillet over medium-high heat, cook the ground beef, onions, and garlic until the beef is browned and the onions are soft. Drain any excess fat.


Add the taco seasoning mix to the skillet and stir to combine.


Add the cooked rice, black beans, and corn to the skillet. Stir to combine and cook until heated through.


Season the mixture with salt and pepper to taste.


Spoon the beef and rice mixture into the bell peppers until they are filled to the top.


Top each pepper with shredded cheddar cheese.


Cover the baking dish with foil and bake for 30-35 minutes, or until the peppers are tender and the cheese is melted and bubbly.


Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown.


Serve the stuffed peppers hot, topped with diced tomatoes, sliced jalapenos, sour cream, and cilantro, if desired. Enjoy!
