Keto: Classic No Bake Cookies
Here's a recipe for keto classic no bake cookies:
Ingredients:
1/2 cup unsweetened almond butter
1/2 cup coconut oil
1/2 cup unsweetened cocoa powder
1/2 cup powdered erythritol
1 tsp vanilla extract
1/4 tsp salt
2 cups unsweetened shredded coconut
Instructions:
In a medium saucepan, melt together the almond butter and coconut oil over low heat until smooth.
Add the cocoa powder, powdered erythritol, vanilla extract, and salt to the saucepan and stir until well combined.
Remove the saucepan from heat and stir in the shredded coconut until fully coated with the chocolate mixture.
Using a cookie scoop or spoon, drop the mixture onto a baking sheet lined with parchment paper.
Place the baking sheet in the fridge and let the cookies set for at least 30 minutes, or until firm.
Store the cookies in an airtight container in the fridge for up to a week.
